Beet, Mint and Feta Salad

Raw beets have a beautiful reddish-purple hue .  As purple is the colour of royalty, give beets the respect they deserve.  This simple salad requires few ingredients: fresh mint, feta cheese, balsamic vinegar and extra virgin olive oil.

This delicious dish is made-in-minutes.  The sweetness of the beets combined with the freshness of the mint makes it the perfect summer salad.

The recipe

1. You will need 1 small beet per person. Peel the raw beetroot and then roughly grate or chop into thin matchsticks.

2.  Roughly chop the mint.

3. Mix in a bowl with two tablespoons of extra virgin olive oil and a tablespoon of balsmaic vinegar.

4. Add small chunks of feta cheese or serve with crumbled feta cheese on top.
