Shrimp, Pepper and Rice Noodle Salad

Salad need not be boring.  This Thai-inspired dish is quick to make and is great on-the-go.  I recommend making extra, as it makes a great packed lunch for the following day. 



1 yellow pepper

1 red pepper

1 shallot or 2 spring onions

2 blocks of rice noodles – about 250g ( I used rice vermicelli noodles)

1 carrot, peeled

1 lime

Shrimp (or prawns for you English readers)

Handful fresh coriander

Handful of salted cashews


2 tablespoons of fresh lime juice

2 tablespoons of fish sauce

2 tablespoons of sweet chilli sauce

1 tablespoon of sesame oil

1.  Whisk together all the dressing ingredients.

2. Place noodles in a bowl and cover with boiling water.  Leave them to stand (about three or four minutes) until they are soft.

3. Drain the noodles and chop them into smaller pieces with scissors.

4. Chop the peppers and carrots into thin strips.  Finely chop the shallot.  Roughly chop the coriander.

5. Put the carrots, peppers, shallot, a small handful of cashews. the shrimp and noodles into a bowl.  Mix thoroughly.  Then pour over the dressing and mix again.

6.  Sprinkle with coriander; garnish with lime wedges.

Makes 4 large servings.

    I have all the ingredients. It sounds like a refreshing alternative to pad Thai to serve this summer.
